Crafted by Kojiya Saburoemon, a tradition since 1839.
This white miso is made with carefully selected domestic large-grain whole soybeans and Kojiya Saburoemon's "pure koji," primarily fermented and aged in wooden vats for 3 to 6 months.
It features a fresh flavor and a rich umami that evoke a cool breeze rustling through a bamboo grove.
Kojiya Saburoemon's miso is additive-free, naturally brewed, and uses only carefully selected domestic ingredients, handcrafted by artisans to create authentic Japanese miso.
