Handcrafted by Kojiya Saburoemon, a tradition since 1839.
This white miso is carefully fermented and aged for 3 to 6 months, primarily in wooden vats, using carefully selected domestic soybeans and Kojiya Saburoemon's "pure koji."
It is a traditional miso made with a rich, pear-like flavor and a mellow aftertaste.
Kojiya Saburoemon's miso is additive-free and naturally brewed, using only carefully selected domestic ingredients and crafted by skilled artisans, embodying the essence of Japanese miso.
