Crafted by Kojiya Saburoemon, a tradition since 1839.
This brown rice red miso is made with carefully selected domestic large soybeans and a special ingredient, "brown rice pure koji." It is meticulously fermented and aged for 18 months in wooden barrels, resulting in a complex, rich flavor and profound umami that evoke the passage of time.
Kojiya Saburoemon's miso is additive-free and naturally brewed, using only carefully selected domestic ingredients and crafted by artisans.
