Chouzameya is located in Niimi City, Okayama Prefecture, which is situated on a karst plateau. The river and spring water there is hard water, similar to that found in Europe, making it an ideal environment for sturgeon. Niimi Fresh Caviar is made only from sturgeon roe and rock salt, with no special processing. The sturgeon are opened, the roe is harvested, washed with water and separated, seasoned, bottled, and then flash-frozen to preserve freshness. We also have strict inspection standards, using only caviar with roe size of 2.5mm or larger and carefully selected maturity.
