Made by Kojiya Saburoemon, a company established in 1839.
This red miso features carefully selected domestic large whole soybeans and Kojiya Saburoemon's "jun koji" (pure koji), used in 20% greater quantity than usual. Hakata salt is also used, and the miso is carefully and slowly fermented and aged in wooden barrels for 18 months.
It has a fragrant and delicate flavor and a rich umami, reminiscent of the morning mist in a modern city.
Kojiya Saburoemon's miso is additive-free and naturally brewed, using only carefully selected domestic ingredients, and is a Japanese miso crafted by artisans.
