Handcrafted by Kojiya Saburoemon, a traditional koji (malted rice) maker since 1839.
This white miso is made using carefully selected large-grain Japanese whole soybeans and Kojiya Saburoemon's "pure koji," primarily fermented and aged in wooden barrels for 3 to 6 months.
It features a fresh flavor reminiscent of a cool breeze rustling through bamboo groves and a rich, floral umami.
Kojiya Saburoemon's miso is additive-free and naturally brewed, made exclusively with carefully selected Japanese ingredients and crafted by artisans.
