Crafted by Kojiyasan Saburoemon, a tradition since 1839.
This white miso is carefully fermented and aged for 3 to 6 months, primarily in wooden vats, using carefully selected domestic soybeans and Kojiyasan Saburoemon's "pure koji."
Made using traditional methods, it is a white miso with a pear-like umami and a mellow aftertaste.
Kojiyasan Saburoemon's miso is additive-free, naturally brewed, made only with carefully selected domestic ingredients, and handcrafted by artisans.
