Carefully crafted by Kojiya Saburoemon, a tradition since 1839.
This brown rice red miso is carefully aged for 18 months in wooden vats, using carefully selected large whole domestic soybeans and the special ingredient "pure brown rice koji."
It is characterized by its complex, rich flavor and deep umami, which evoke a sense of timelessness.
Kojiya Saburoemon's miso is additive-free and naturally brewed, made with only carefully selected domestic ingredients, and handcrafted by artisans, representing Japanese miso.
