This special soy sauce is made using a traditional method with five carefully selected ingredients (soybeans from Kyushu, wheat from Kyushu, sun-dried salt, underground spring water from the brewery, and cedar barrels), and fermented and aged for over a year using only natural forces. It is a traditionally brewed honjozo koikuchi (dark) soy sauce that mass-produced soy sauces can never replicate. Since it is a raw (nama) soy sauce that has not been pasteurized for sterilization purposes, the original flavor of the soy sauce is preserved. It's excellent as a dipping sauce for sashimi and pickles, as well as a secret ingredient for stews and other dishes. When used in seasoned rice, the original aroma of the soy sauce stands out, and the flavor is exceptional.
