This is a special soy sauce made with five carefully selected ingredients (soybeans and wheat from Kyushu, sun-dried salt, groundwater from the brewery's well, and cedar barrels) using a traditional method. It is fermented and aged naturally for over a year. This is a traditionally brewed honjozo dark soy sauce, following old-fashioned methods that cannot be replicated by mass-produced soy sauces. Since it is raw (nama) soy sauce and has not undergone any heat treatment for pasteurization, the original flavor of the soy sauce is preserved. It's excellent as a dipping sauce for sashimi and pickles, and also as a secret ingredient in stews and other dishes. When used in seasoned rice, the authentic aroma of the soy sauce stands out, and the flavor is exceptional.
