This is a special soy sauce prepared using a traditional method with five carefully selected ingredients (Kyushu-grown soybeans, Kyushu-grown wheat, sun-dried salt, kurai-ido spring water, and cedar barrels), then fermented and aged for over a year using only natural forces. It is a traditionally brewed honjozo koikuchi soy sauce that follows ancient production methods, something mass-produced soy sauces can never replicate. As it is a "raw" (nama) soy sauce that has not undergone any heat treatment for pasteurization, the original flavor of the soy sauce is preserved. It is excellent as a pouring sauce for sashimi and pickles, and also as a secret ingredient in simmered dishes and other cooking. When used in seasoned rice, the original aroma of the soy sauce stands out, and the flavor is exceptional.
